Easy Red Velvet Strawberry Shortcake


I pinned this recipe on Pinterest a long time ago -- I'm always glad they don't show the date you pinned something. "You've been waiting to get around to this for 15 months." Looks all fancy in the picture, but had I known how easy (and delicious) the recipe was I probably wouldn't have waited 15 months to get around to it.

Originally from i am baker, this recipe uses boxed cake mixes with whipped cream for frosting. Her website has great step-by-step pictures that will make you very hungry! I didn't get any pictures of our cake, because I assembled it at a friends house and we snarfed that beautiful dessert down. Here is the thing. I don't actually like cake that much. But strawberries are good. And I really like whipped cream.

You'll need:

Red Velvet Cake Mix (And eggs/oil according to box)
White Cake Mix (And eggs/oil according to box)
2 tubs Whipped Cream
1.5 - 2 pounds Strawberries, chopped

Bake 1 box Red Velvet cake mix and 1 box White cake mix using the baking instructions on the box for 2 circle cakes. Let the cakes cool. Layer cake, whipped cream, strawberries -- repeat, alternating cake colors.
